Skagen Toast Melt with Cheddar

Elevate a classic Nordic favorite with this indulgent Skagen toast melt. Fresh, hand-peeled shrimp salad meets rich, melted aged cheddar between golden, buttery slices of griddled sourdough bread for the ultimate comforting lunch.

250g (9 oz) Fresh shrimp, hand-peeled and chopped
4 Slices sourdough bread
100g (1 cup) Aged cheddar cheese, shredded
30g (2 tbsp) Unsalted butter, softened
Sauce/Dressing
60g (1/4 cup) Mayonnaise
30g (2 tbsp) Crème fraîche or sour cream
15g (2 tbsp) Fresh dill, finely chopped
15g (1 tbsp) Red onion, finely minced
5ml (1 tsp) Fresh lemon juice
1g (1/4 tsp) Salt and black pepper
Garnish
4 Fresh dill sprigs
Instructions
Mix 60g (1/4 cup) mayonnaise, 30g (2 tbsp) crème fraîche, chopped dill, red onion, lemon juice, and seasonings in a bowl.
Fold 250g (9 oz) chopped shrimp into the dressing until evenly coated; refrigerate for 10 minutes.
Butter one side of all 4 sourdough slices using 30g (2 tbsp) softened butter.
Place two bread slices butter-side down in a cold skillet; top each with 50g (1/2 cup) cheddar.
Divide the chilled shrimp salad equally over the cheese on both slices.
Top with remaining bread slices, ensuring the buttered sides face outward.
Grill over medium-low heat for 3–4 minutes per side until the bread is golden and cheese melts.
Slice each sandwich diagonally into triangles.
Arrange on a platter and garnish with fresh dill sprigs.
