Inspired by the cult-favorite burger joint Franky’s in Stockholm, this burger redefines indulgence with an unapologetic collision of earthy luxury and savory punch. A hard-smashed beef patty with deeply caramelized, lacy edges is blanketed in molten sharp cheddar, layered with shaved crisp white onion, and balanced by briny dill pickles. What elevates it into modern bistro territory is the sauce interplay: rich, velvet truffle mayonnaise tucked beneath a glossy, spicy-sweet gochujang-miso reduction.
The Bistro Recipe
Inspired by Stockholm's cult-favorite Franky's, this burger pairs a deeply crusted, lacy smash patty with sharp cheddar, shaved onions, velvety black truffle mayo, and a spicy-sweet gochujang-miso glaze.
- 0.25 cup high-quality mayonnaise
- 2 tsp black truffle paste or minced truffle carpaccio
- 1 tbsp gochujang paste
- 1 tbsp mild white or yellow miso paste
- 1 tbsp mirin (or honey)
- 1.5 lb fresh ground beef chuck (80/20), divided into 4 balls
- 4 pieces brioche or potato burger buns, split
- 4 pieces thick deli-cut sharp cheddar slices
- 0.5 pieces white onion, shaved paper-thin on a mandoline
- 12 pieces thinly sliced dill pickle chips
- 2 tbsp unsalted butter, softened
- Coarse kosher salt & cracked black pepper, to taste

1Fold Truffle Mayo
Whisk mayonnaise and truffle paste until glossy and homogenous. Cover and refrigerate to allow flavors to meld.

Whisk gochujang, miso, mirin, and warm water in a small pan over low heat until silkily reduced. Keep warm.

Spread softened butter across bun faces. Griddle on medium heat until burnished mahogany and crisp; set aside.

Set cast iron to smoking high. Drop beef, press flat with parchment, season aggressively, and sear until deeply lacquered.

Scrape up crisp fond, flip patty, top immediately with cheddar, and tent with a lid for 30 seconds.

Never use cheap truffle oil—its synthetic perfume overwhelms the delicate balance. Genuine black truffle carpaccio or paste binds naturally with the egg emulsion in mayonnaise, creating a buttery baseline that softens the sharp fermented punch of the gochujang and miso.
