- 2 cans tuna in olive oil (approx. 5–6 oz / 150g each), drained with 1 tbsp oil reserved
- 8 oz baby Yukon gold potatoes, quartered into bite-sized pieces
- 1 pieces ripe Hass avocado, peeled, pitted, and sliced into wedges
- 2 pieces large eggs, chilled
- 1.5 tbsp nonpareil capers, drained
- 3 oz tender baby greens and chicory
- 2 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar or Champagne vinegar
- 1 tsp Dijon mustard
- 1 tbsp finely minced shallot
- 0.5 tsp dried herbes de Provence
- Flaky sea salt & freshly cracked black pepper, to taste

Cover potatoes in cold salted water. Simmer until tender to a knife point, 10–12 minutes, then drain completely.

Lower cold eggs into simmering water. Cook 6 minutes and 45 seconds, plunge into ice water, peel, and halve.

Whisk vinegar, Dijon, shallot, olive oil, and dried herbs with salt and pepper until silky and fully emulsified.
