The Bistro Recipe
Slow-braised Caribbean oxtails simmered in a deep, glossy mahogany gravy flavored with thyme, allspice, garlic, and scotch bonnet until meltingly tender and gelatinous.
- 3.5 lb beef oxtail, trimmed of excess fat
- 1 tbsp Caribbean browning sauce (e.g., Grace or Kitchen Bouquet)
- 2 tbsp dark soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp dark brown sugar
- 1 tsp ground Jamaican allspice (pimento)
- Flaky sea salt & freshly cracked black pepper, to taste
- 2 tbsp neutral cooking oil
- 1 piece yellow onion, finely chopped
- 4 cloves garlic, finely minced
- 3 stalks scallions, thinly sliced
- 4 sprigs fresh thyme
- 1 piece whole Scotch bonnet pepper (kept whole, unpunctured)
- 3 cup rich beef stock
- 1 can butter beans, rinsed and drained

1Season & Marinate
Toss oxtails with browning sauce, soy sauce, Worcestershire, brown sugar, salt, pepper, and ground allspice until evenly coated.

2Hard Sear
Heat oil in a heavy Dutch oven over medium-high. Sear oxtail pieces until deeply bronzed with a dark caramelized crust.

Transfer oxtails to a plate. Add onion, scallions, garlic, and fresh thyme to pan drippings; sauté until fragrant and soft.
