Kimchi Jjigae

Served bubbling hot in a traditional brass pot, this kimchi jjigae captures the electric energy of a late-night Korean bistro table. Caramelizing aged kimchi in rich, rendered pork belly creates a deeply savory fond that anchors the crimson, gochujang-spiced broth. Paired with glossy steamed short-grain rice and crisp, tangy quick-pickled cucumbers, it delivers the ultimate balance of unctuous heat and palate-cleansing crunch.

  • 1 tbsp gochugaru (coarse Korean chili flakes)
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 3 cup anchovy-kelp dashi or chicken stock
  • 7 oz firm tofu, sliced into bite-sized slabs
  • 1 pieces toasted nori sheet, shredded into thin strips
Steamed Short-Grain Rice
  • 1.5 cup uncooked short-grain white rice
  • 1.75 cup water
Pickled Sesame Cucumbers
  • 2 pieces Persian cucumbers, sliced paper-thin
  • 2 tbsp unseasoned rice vinegar
  • 1 tsp granulated sugar
  • 0.5 tsp fine sea salt
  • 0.5 tsp toasted sesame oil
  • 1 tsp toasted white sesame seeds
Instructions
  1. 1
    Steam Rice

Rinse rice thoroughly until water runs completely clear. Simmer covered with water for 15 minutes, then rest off-heat 10 minutes.

  2. 2
    Pickle Cucumbers

Toss sliced cucumbers with vinegar, sugar, and salt. Marinate 15 minutes, drain excess moisture, then fold in sesame oil and seeds.

  3. 3
    Render Pork Fat

Warm sesame oil in a pot over medium-high. Sear pork belly until rendered fat bubbles and meat turns deeply golden.

  4. 4
    Caramelize Kimchi

Stir in chopped kimchi, garlic, gochujang, and gochugaru. Sauté for 5 minutes until soft, intensely red, and aromatic.

  5. 5
    Simmer Stew

Add kimchi brine, soy sauce, sugar, and stock. Bring to a rapid rolling boil, then simmer gently for 20 minutes.

  6. 6
    Finish & Serve

Slide tofu into broth for 5 minutes. Top with shredded nori and serve immediately with hot rice and chilled pickles.

Bistro Technique: The Triple Temperature Contrast

The magic of a restaurant Korean table relies on temperature and texture clashes. Serve the jjigae furiously bubbling in its brass pot, spooned over steaming, sticky short-grain rice, and immediately follow each bite with an ice-cold, crunchy pickled cucumber slice to reset your palate.
