Inspired by Stockholm’s celebrated Take Ramen in Vasastan, this refined tonkotsu bowl balances unapologetic depth with Nordic precision. The secret lies in an aerated, deeply emulsified bone broth finished with an immersion blender for an ethereal, creamy foam that clings to every noodle strand. Paired with blowtorch-charred pork belly, jammy soy-marinated eggs, and delicate chili threads, it is a masterclass in layered umami and textural harmony.
The Bistro Recipe
Reverse-engineered from Take Ramen in Stockholm, this artisanal Tonkotsu Ramen pairs an airy, micro-emulsified pork broth with torched chashu and jammy ajitama.
- 2 lb pork neck bones and trotters, rinsed clean
- 1 lb pork belly slab, boneless and skin-on
- 0.25 cup Japanese soy sauce (shoyu)
- 0.25 cup mirin
- 2 tbsp sake
- 1 piece dried kombu (approx. 4 inches)
- 4 portions fresh craft ramen noodles
- 4 pieces soft-boiled ajitama eggs, peeled and halved
- 0.5 cup seasoned menma (bamboo shoots)
- 4 sheets nori seaweed squares
- 0.25 cup scallion greens, finely shredded into curls
- Korean chili threads (sil-gochu) & freshly ground black pepper, to taste

1Blanch Bones
Boil pork bones vigorously for 10 minutes, drain completely, and scrub clean under cold running water.

2Rapid Boil
Cover bones with water. Boil rapidly uncovered for 6 hours, replenishing water, until liquefied and milky white.

3Braise Chashu
Simmer pork belly gently with soy sauce, mirin, and sake for 90 minutes until tender; cool and slice.

4Marinate Ajitama
Submerge peeled 6-minute eggs in strained chashu braising liquid for 2 hours, then slice gently in half.

5Torch Pork
Sear pork slices directly with a kitchen torch until edges blister, fat bubbles, and a smoky aroma blooms.

6Emulsify Broth
Combine hot broth with shoyu seasoning; aerate using an immersion blender until a creamy micro-foam blankets the top.

7Cook Noodles
Drop noodles into rolling water for 75 seconds until springy. Shake dry vigorously to avoid diluting the broth.

8Assemble & Finish
Ladle foamed soup over noodles. Top with charred chashu, eggs, bamboo, crisp nori, scallion ribbons, and chili threads.
