The Bistro Recipe
A silky, restaurant-style Mapo Tofu recreating the cult Stockholm classic from Mormors Dumplings. Featuring tender braised tofu cloaked in a glossy, numbing chili sauce layered with fermented umami.
- 1.1 lb medium-firm or smooth silken tofu, cut into 3/4-inch cubes
- 3.5 oz ground pork or beef (optional, for savory texture)
- 2 tbsp cooking oil (peanut or neutral oil)
- 2 tbsp Pixian doubanjiang (fermented chili bean paste), finely minced
- 1 tbsp fermented black beans (douchi), rinsed and lightly crushed
- 1 tbsp fresh garlic, finely minced
- 1 tbsp fresh ginger, finely minced
- 1.5 cup low-sodium chicken stock or rich vegetable stock
- 1 tbsp light soy sauce
- 1 tsp dark soy sauce (for rich color)
- 1 tsp granulated sugar
- 1.5 tbsp cornstarch (mixed with 3 tbsp cold water)
- 2 tbsp chili oil
- 1 tsp ground roasted Sichuan peppercorn powder
- 2 pieces scallions, green and white parts sliced

Simmer cubed tofu gently in salted water for 2 minutes to firm up. Drain carefully and set aside.

Heat neutral oil in a wok over medium-high. Add minced pork and sear until dark, crispy, and fully rendered.

Reduce heat to medium. Stir in minced doubanjiang and fermented black beans until the oil stains vibrant red.
