Thoroughly dried baby squid are dusted in coarse durum wheat flour (harina de almorta or semolina rimacinata) and plunged into scorching olive oil until lacy, featherlight, and shatteringly crisp. Finished with a snow of flaky sea salt and a generous squeeze of lemon, they offer a tender, sweet maritime bite enveloped in crunch.

A tribute to Nuevo Reino in Marbella: tender baby squid coated in fine durum flour and flash-fried in hot olive oil for a delicate, shatteringly crisp finish.
- 1.3 lb fresh baby squid (calamaritos), cleaned, rinsed, and patted thoroughly dry
- 1.5 cup Spanish durum flour (harina para fritura de pescado) or finely ground semolina
- 3 cup mild olive oil or high-heat frying oil
- Flaky sea salt (such as Maldon or Flor de Sal), to taste
- 1 pieces fresh unwaxed lemon, cut into halves or thick wedges

1Dry the Squid
Press the baby squid thoroughly between paper towels until completely dry; moisture destroys the lacy crust.

2Heat the Oil
Warm oil in a wide skillet to 375°F (190°C); a flour pinch should sizzle immediately upon contact.

Toss squid in flour, then shake rigorously through a wire strainer to discard all loose powder.
