150g (1.5 cups) Graham cracker crumbs
65g (1/3 cup) Granulated sugar
75g (5 tbsp) Unsalted butter, melted
4 Large egg yolks
400g (14 oz / 1 can) Sweetened condensed milk
120ml (1/2 cup) Key lime juice
6g (1 tbsp) Key lime zest

Mix 150g (1.5 cups) crumbs, 65g (1/3 cup) sugar, and 75g (5 tbsp) melted butter in a bowl until combined.
Press mixture firmly into bottom and sides of a 23cm (9-inch) pie dish.
Bake crust at 175°C (350°F) for 10 minutes until golden; cool completely.
Whisk 4 egg yolks and 6g (1 tbsp) lime zest together for 2 minutes until pale.
Beat in 400g (14 oz) sweetened condensed milk until thickened and smooth.
Whisk in 120ml (1/2 cup) lime juice slowly until completely incorporated.
Pour creamy filling into cooled crust; smooth top gently with a spatula.
Bake at 175°C (350°F) for 15 minutes until center sets with a slight wobble.
Chill in refrigerator for at least 3 hours before slicing and serving.
